Introduktion:
The objective of PlantsGoGlobal is to make a comparative study of experiences with the transition from a highly animal-based food system towards a stronger plant-based food system in the selected countries, in-luding development of sustainable plant-based food value chains and reaching higher production and con-sumption of plant-based food, while handling technological and cultural barriers.
Despite the Danish national action plan for plant-based food there are still knowledge gaps in Denmark about successful transition initiatives in other countries with a similar food sector. The PlantsGoGlobal project is additional to the present Danish strategies by providing detailed knowledge about foreign experiences with:
- The role of different types of plant-based food: fresh vegetables, legumes, processed meat ana-logues, etc. in the transition towards a higher consumption of these and a simultaneous lower con-sumption of animal-based foods.
- Conversion strategies from feed to food production for farms and the roles herein of actors from agriculture, crop pre-processing companies (drying, dehulling, etc.), food industry, food service and retailers,
- The role of public and private catering in market development for plant-based food,
- Strategies for changing consumer practices towards a higher consumption of plant-based food in households and public and private catering
- Strategies for funding and ownership models for R&D facilities and other types of infrastructures,
- Strategies for development and funding of initiatives within education and vocational training,
Knowledge and inspiration from the successful development of plant-based value chains, change of consumer preferences, habits and practices, and enabling and supporting infrastructures and institutions in other countries will be obtained through research visits, interviews, and literature research.
The findings from these country-studies will, in dialogue with an advisory panel consisting of Danish key stakeholders, be translated into strategies and action points that can help accelerating the transition towards a higher consumption and production of plant-based foods in Denmark.
The results from the PlantsGoGlobal project will be disseminated through several means of communication, e.g. articles, reports, and posts to different social media to ensure maximum outreach.
The research in PlantsGoGlobal will focus on The Netherlands, Germany, Sweden and Canada. These selected countries are all considered frontrunners in adopting a climate-friendly, plant-based diet, through value chain infrastructure building, product development, information, investments, attracting major food and ingredient brands, creating favorable plant-based business eco-systems, and supporting food innovation, among others.
